When it comes to planning events, sometimes you can tick all of the logistical boxes, you can style a space to perfection, guests filter into your meticulously planned occasion… but the vibe isn’t quite there. As event stylists, the goal isn’t ever to impress guests with elaborate decor, it’s always about creating atmosphere. And it starts with the venue.
High on our list of waterfront spaces that lend to effortless cocktail celebrations is Sydney’s Poolside at Andrew (Boy) Charlton. Events aside, it’s a destination you’ll find us frequenting on any sun drenched Sunday morning, or for afternoon cocktails on their stunning outdoor terrace. Poolside is the kind of transportive space that completely shifts your mood, the moment you step through the entrance.
Enveloped by water, perched on the edge of Sydney Harbour and overlooking the iconic Andrew (Boy) Charlton Pool, Poolside is our dream space for languid dining and cocktail events. Beautifully infused with modern decor, Poolside evokes a mood of effortless Summer elegance, so effortlessly chic it barely requires styling. An open aired terrace is scattered informally with cocktail furniture, black and white striped umbrellas shadow contemporary wireframe chairs (finally a venue that provides decor you would actually choose to hire!), and tables are accented with organically shaped, hand painted ceramics. Inside, floor-to-ceiling glass windows provide unobstructed views over Sydney Harbour and Woolloomooloo Bay, perfect for wet weather, or as a winter venue for those wanting oceanic inspired celebrations without being exposed to the elements.
Inspired by the venue's relaxed summer mood, Poolside has us dreaming up chic cocktail celebrations accented with luxe tropical decor achieved with foliage. Think simple, structural arrangements like singular bismarckia fronds angularly placed in vases. Combine layers of greenery (we love muted or deep green tones) in contrasting textures and shapes. Keep your focus on exquisite canapés, beautifully presented and suffused with flavours evocative of exotic travels. Think fresh seafood, oyster and sashimi bars, artfully arranged salads styled with edible blooms, entrees perfumed with flavours of citrus, mango and coconut, all paired with signature summer cocktails. For cocktail events, Poolside also offers chef stations where they can cook and serve a signature menu on the outdoor terrace, adding beautifully to a mood of relaxed summer elegance.

Lending itself to a luxurious sunset cocktail celebration for up to 150 guests, or a formal sit down affair for up to 120 guests. The dining area is a blank canvas to create a sophisticated reception that is understated and infinitely classic in style. Infinity tables of crisp white linen, elegantly stemmed wine glasses and amber hued water glasses, paired with natural beech dining chairs organically style the space. Flowing seamlessly onto the balcony, the ghost style chairs add that barely there feel, creating an added element of openness. While the view of Luna Park and the lights of the ferris wheel as night falls, create a mesmerising backdrop evoking childhood memories of carefree summers past.
And Aqua Dining doesn’t just rely on his enviable location. The culinary offerings designed by Head Chef and Co-owner Davide Rebeccato follow a seasonal menu inspired by the breathtaking geography and local Australian produce. Catering for exclusive events, this contemporary Italian restaurant reflects the ultimate fusion of au courant Sydney dining. With floor to ceiling windows offering uninterrupted views of the surroundings, it is the idyllic location to watch the sky come alive with hibiscus hues as the eventide rolls in, and the city opens her twinkling eyes creating liquid metals that dance over the water. Aqua Dining can accommodate up to 120 guests for a formal dining event or up to 150 guests for a cocktail style event.
The Semi Private Area is located at the harbour end of the main dining room and is separated from other diners by a drop down screen. This space can seat up to 46 guests for a sit down style lunch or dinner.
Formal Dining Events
3 course menu is offered that allows your guests to have the luxury of selecting their main meal from a reduced a la carte menu of your choice.
Cocktail Style Events
For cocktail style events, a premium menu of canapés and susbstantials is offered.
The beverage packages showcase an extensive wine list, featuring award-winning wines that serve to complement the menu.
Semi Private Dining
Aqua Dining offers 3 and 4 course menus. Degustation menus can be tailored on request.
For guest numbers of: 12 - 19 guests place an order from a selection of 2 dishes for each course
