When it comes to planning events, sometimes you can tick all of the logistical boxes, you can style a space to perfection, guests filter into your meticulously planned occasion… but the vibe isn’t quite there. As event stylists, the goal isn’t ever to impress guests with elaborate decor, it’s always about creating atmosphere. And it starts with the venue. 

High on our list of waterfront spaces that lend to effortless cocktail celebrations is Sydney’s Poolside at Andrew (Boy) Charlton. Events aside, it’s a destination you’ll find us frequenting on any sun drenched Sunday morning, or for afternoon cocktails on their stunning outdoor terrace. Poolside is the kind of transportive space that completely shifts your mood, the moment you step through the entrance. 

Enveloped by water, perched on the edge of Sydney Harbour and overlooking the iconic Andrew (Boy) Charlton Pool, Poolside is our dream space for languid dining and cocktail events. Beautifully infused with modern decor, Poolside evokes a mood of effortless Summer elegance, so effortlessly chic it barely requires styling.  An open aired terrace is scattered informally with cocktail furniture, black and white striped umbrellas shadow contemporary wireframe chairs (finally a venue that provides decor you would actually choose to hire!), and tables are accented with organically shaped, hand painted ceramics. Inside, floor-to-ceiling glass windows provide unobstructed views over Sydney Harbour and Woolloomooloo Bay, perfect for wet weather, or as a winter venue for those wanting oceanic inspired celebrations without being exposed to the elements. 

Inspired by the venue's relaxed summer mood, Poolside has us dreaming up chic cocktail celebrations accented with luxe tropical decor achieved with foliage. Think simple, structural arrangements like singular bismarckia fronds angularly placed in vases. Combine layers of greenery (we love muted or deep green tones) in contrasting textures and shapes. Keep your focus on exquisite canapés, beautifully presented and suffused with flavours evocative of exotic travels. Think fresh seafood, oyster and sashimi bars, artfully arranged salads styled with edible blooms, entrees perfumed with flavours of citrus, mango and coconut, all paired with signature summer cocktails. For cocktail events, Poolside also offers chef stations where they can cook and serve a signature menu on the outdoor terrace, adding beautifully to a mood of relaxed summer elegance.

Of all of the curated luxuries we can attach to the wedding day, the true jewels of the occasion are the things that transcend it. They’re the things that last well after a carefully planned day, becoming the building blocks of a lifetime. They’re the sub-modalities at play, that elevate an occasion from a gathering that takes its place in your memory, to an experience that makes its home in your heart.

More than ever the greatest luxury of all, is the symphonic beauty of the uncluttered. It’s having the base to create, the space to breathe, to dream, to believe, to contemplate, to start every moment anew. The space for sensory silence instead of the inspiration-muting effects of the deafening sensory overload the world hits us with every day. Situated on Sydney’s far northern beaches, it is a crystal in the crown of this iconic stretch of coastline. Offering an uninterrupted connection with the sea owing to it's sweeping 180 degree aspect on the sands of Avalon Beach, and flooded with natural light, it’s easy to forget that you’re indoors. Overlooking palomino sands of reincarnated shells, giving way to a sea of aqua so distinct, the hue itself could be more accurately named 'avalon blue', it is a wedding and reception venue of arresting natural beauty.

Driving north from the city, the moment you begin the coastal meander around the well known Bilgola Bends, the weight of the world falls to the sea below and you immediately feel like you’re on holidays. Avalon awaits on the other side, and is a vibrant village of food, fashion, and curiosities, with a distinctly French flavour that your visiting guests will love to explore. The windows of The Avalon On The Beach are the eyes to the soul of the locale. Perched directly on the sand, with a summer-all-year-round vibe, and an ocean breeze that becomes you, it is the perfect blank space to style your dreams.

We recently road-tested the space ourselves, creating our own mood-board and bringing it to life within this idyllic seaside venue. We were struck by it’s shape-shifting ability to follow any brief, allowing a styling paint-by-numbers, cushioning any décor decision with the finest canvas and palette to work with (and that view!).

The Avalon On The Beach, embodies the kind of completely unbridled limitlessness, that steps far beyond the wedding day. It is a physical space of stunning beauty, but more importantly, it inspires that metaphysical space, the one that carries forward love, depth and freedom into a marriage, creating indelible memories that aren’t just remembered, but felt.

MOOD: Inspired by the mesmerising fluidity of the ocean and the glimmering dappled light on the surface of the water, a balance of delicate lightness and effortlessly chic elegance.

DECOR: The tablescape is a serene palette of layered whites and iridescent textures evocative of the luminescent ocean in the glistening sunlight. Movement is created with dramatic drapes of billowy table linen. The glassware is handshaped and the organically shaped tableware contrasts with structural black elements in the way of matte black flatware and wire seating to add a sense of grounding to the organic feel of the tablescape. An overflowing eruption of andromeda and white phalaenopsis orchids spills over the tablescape reminiscent of intriguingly complex ecosystems.

STATIONARY: Handpenned calligraphy place cards on raw edged textural handmade card. 

DRESS: For bridal parties, chic slender slip dresses paired with imperfectly undone knotted hair and a statement drop earring. 


MOOD: Natural, effortless, raw simplicity…

DECOR: Long exposed whitewashed timber tables are sparsely styled with weathered driftwood, bleached of all its colour intertwined amongst long tapered flickering candles. Laid with mother of pearl handled flatware alongside hand thrown plates of pale in dusty, muted neutrals and irregular shaped glass tumblers, sitting quietly on muslin linen placemats, the tables finished with sun, exposed white wooden chairs.

STATIONARY: Menu design inspired by the movement of the ocean, faint gradient water-washed brush work adds to the relaxed, calm feel of the tablescape.

DRESS: Ethereal floaty, silhouettes in a palette of muted neutrals.. Tousled hair, styled half up lends itself to the overall romantic effortlessness.. 

Sweeping Sydney Harbour Views. Aqua Dining

If there was a venue that could capture that feeling of returning home after long journeys abroad - the familiar beauty of decending over Sydney's inky waterways through painterly morning light, it’s Aqua Dining. Striking the balance between personal style and sentimentality, a jewel in the crown of the world renowned stretch of Sydney Harbour, Aqua Dining stylishly offers it all. Infinity tables of crisp white linen, elegantly stemmed wine glasses and amber hued water glasses, paired with natural beech dining chairs organically style the space. Flowing seamlessly onto the balcony, the ghost style chairs add that barely there feel, creating an added element of openness. While the view of Luna Park and the lights of the ferris wheel as night falls, create a mesmerising backdrop evoking childhood memories of carefree summers past.

And Aqua Dining doesn’t just rely on his enviable location. The culinary offerings designed by Head Chef and Co-owner Davide Rebeccato follow a seasonal menu inspired by the breathtaking geography and local Australian produce. Catering for exclusive events, this contemporary Italian restaurant reflects the ultimate fusion of au courant Sydney dining. Aqua Dining can accommodate up to 120 guests for a formal dining event or up to 150 guests for a cocktail style event. 

The Semi Private Area is located at the harbour end of the main dining room and is separated from other diners by a drop down screen. This space can seat up to 46 guests for a sit down style lunch or dinner.
